This camping breakfast burrito recipe is absolutely delicious! It’s perfect for feeding a crowd or just a few.

We just got back from a lovely camping trip with a large group of friends. It is so much fun to plan trips with friends! We set up a communal style campsite where we all ate together and got to hang out. And all of our kids… they had so much fun! It was wonderful.

Each of the families were delegated a meal that they were responsible for cooking during our stay. I LOVED this! Only having to cook once?!?! Awesome! We made breakfast Saturday morning for 28 people {mostly kids}. And this Camping Breakfast Burrito Recipe was just the perfect thing! We also love this campfire dip recipe, this campfire pizza bake and these camp cooker cookies.

How to make camping breakfast burritos:

Ingredients:

  • ground, italian sausage
  • medium onion
  • green pepper
  • minced garlic
  • eggs
  • mozzarella cheese

I do 90% of my camping meal preparation at home and this was no exception. I began by frying a package of ground, hot italian sausage in a large skillet. Then I added a medium diced onion, a diced green pepper and 2 tsp of minced garlic. I cooked the mixture until the onion was opaque and the meat was well done.

Then I scrambled a dozen eggs. I added about 2 Tbsp of milk to the raw egg, I find that it makes the eggs fluffier. Salt and pepper was added to taste.

I combined the egg and meat mixture. Then I added 1 cup of shredded mozzarella cheese and mixed until it was melted into the still warm sausage and eggs.

Finally I spooned about 1/2 cup of the sausage and egg mixture into the center of a large flour tortilla and rolled it up.

I wrapped each tortilla in Saran Wrap so that they wouldn’t stick to each other.

Then I placed them into large Ziploc freezer bags and into the freezer. This recipe made about 12 camping breakfast burritos so I had to double it {and add more eggs} for our party of 28 people.

We packed these in a cooler and brought them out Saturday morning to simply heat up and serve with hash browns. They are really delicious and a great way to have a filling breakfast without too much mess while camping.

This camping burrito recipe is the perfect make ahead meal for breakfast!

Ingredients

  • 1 lb ground, italian sausage
  • Medium onion, diced
  • Green bell pepper, diced
  • 2 tsp minced garlic
  • 1 dozen eggs
  • 2 Tbsp milk
  • 1 cup mozzarella cheese, shredded
  • 12 large tortillas

Instructions

  1. In a large skillet, cook the sausage.
  2. Add onion, pepper and garlic and cook until onion is opaque.
  3. Next mix the eggs with milk and scramble.
  4. Combine the egg and sausage mixture.
  5. Add cheese and stir in until melted.
  6. Spoon about 1/2 cup of the egg filling onto each tortilla and wrap it into a burrito.
  7. Warm the burrito over the campfire or BBQ to heat up when camping.
